Selecting the Perfect Potatoes for Smashed Potatoes

The secret to exceptional smashed potatoes starts with choosing the right variety. For the best results, opt for smaller, waxy potatoes, often referred to as baby potatoes, new potatoes, or fingerlings. Yellow or white baby potatoes are excellent choices due to their naturally round shape and creamy texture when cooked. These smaller potatoes offer a delightful fluffiness once boiled and smashed, holding their shape beautifully while creating ample surface area for crisping up in the oven. While yellow and white varieties are ideal, red potatoes can also be used, or even a colorful mix to add visual appeal and subtle variations in flavor.

Avoid starchy potatoes like Russets, as they tend to fall apart too easily when smashed and can become overly dry. Waxy potatoes, on the other hand, maintain their structure, allowing for that coveted crispy exterior and tender interior. Always choose potatoes that are firm, free from sprouts or green spots, and have smooth, unblemished skins.

Expert Tips for Making the Best Smashed Potatoes

Achieving smashed potato perfection is simple with a few key techniques. Follow these pro tips to ensure your potatoes are consistently crispy, flavorful, and wonderfully tender every time:

  • Size Matters: Always reach for smaller-sized potatoes. Baby potatoes, new potatoes, or fingerlings are ideal. Their smaller stature ensures they cook evenly and crisp up beautifully, offering more crispy surface area per potato.
  • Skins On for Flavor and Texture: Do not peel your potatoes! Leaving the skins on adds a rustic charm, enhances the flavor, and contributes significantly to that desirable crispy texture. Plus, it saves you time on prep! Ensure you wash them thoroughly before boiling.
  • The Essential Pre-Cook: Pre-cooking the potatoes in boiling water until tender is crucial. This step ensures that the insides are soft and fluffy before they even hit the oven. The subsequent roasting then focuses on creating that irresistible golden-brown crispness on the outside without drying out the interior. Boil them just until fork-tender, being careful not to overcook them into mush.
  • Proper Smashing Technique: When smashing, apply firm but gentle pressure with the back of a wooden spoon or a potato masher. You want them to flatten and split slightly, creating more surface area for crisping, but not disintegrate completely. Each potato should remain mostly intact.
  • Generous Oiling: Don’t be shy with the oil! Brushing the smashed potatoes with a good amount of oil (especially focusing on the exposed edges) is key to achieving maximum crispiness. The oil helps conduct heat and promotes browning, creating that coveted crunch.
  • Don’t Crowd the Pan: Arrange your smashed potatoes in a single layer on the baking sheet, ensuring they have enough space around them. Overcrowding the pan will steam the potatoes instead of roasting them, resulting in a less crispy outcome. Use two baking sheets if necessary.

Storing and Reheating Smashed Potatoes

One of the many great things about smashed potatoes is their potential for leftovers, though they are often so good there aren’t any! Here’s how to store and reheat them to maintain their deliciousness:

How Long Will Smashed Potatoes Store in the Fridge?

Once cooled, store any leftover smashed potatoes in an airtight container in the refrigerator for up to five days. While they will inevitably lose some of their initial crispy texture, their incredible flavor will remain largely intact, making them still a delightful treat.

Can I Make Smashed Potatoes Ahead of Time?

Yes, you absolutely can! To get a head start on your meal prep, you can boil the potatoes up to two days before you plan to roast them. Simply cook them in water as directed, drain them thoroughly, and then store them in an airtight container in the refrigerator. When you’re ready to roast, remove them from the fridge, smash them, brush with oil, season, and bake as instructed. Since the potatoes will be cold, you may need to add a few extra minutes to the baking time to ensure they are heated through and properly crisped.

The Best Way to Reheat Smashed Potatoes

To bring your leftover smashed potatoes back to life and restore some of their glorious crispiness, the oven is your best friend. Preheat your oven to 425°F (220°C). Arrange the potatoes in a single layer on a lightly greased baking sheet and bake for 10-15 minutes, or until they are warmed through and the edges have crisped up again. If you’re short on time, the microwave can also be used, but be aware that it won’t achieve the same crispy texture. However, they will still taste wonderfully flavorful. Alternatively, for a quick and satisfying breakfast or brunch, you can chop them up and reheat them in a skillet on the stove, transforming them into a delicious hash.

How to Make Smashed Potatoes: A Simple Step-by-Step Guide

Crafting these delectable Smashed Potatoes with Lemon, Garlic, and Feta is surprisingly simple and requires just a few straightforward steps. Here’s how you’ll achieve crispy perfection:

  1. Prepare the Oven and Baking Tray: Begin by preheating your oven to 400°F (200°C). Lightly brush a large metal baking tray with 1 tablespoon of vegetable oil and set it aside. This prepares the base for your potatoes to crisp up without sticking.
  2. Boil the Potatoes: Place your chosen baby potatoes (about 1.5 lbs) in a saucepan. Cover them generously with cold water. Bring the water to a rolling boil, then reduce the heat to a gentle simmer. Allow the potatoes to cook for 12-15 minutes, or until they are tender enough to be easily pierced with a fork but still hold their shape. Drain the potatoes completely.
  3. Smash and Oil: Carefully transfer the drained, tender potatoes onto the prepared baking tray, ensuring they are arranged in a single layer. Using the back of a wooden spoon or a potato masher, gently flatten each potato. The goal is to squash them down so the skin splits and the potato expands, but without completely breaking them apart. Once smashed, brush another 1 tablespoon of oil generously over all the potatoes, paying special attention to the exposed edges to maximize crispness.
  4. Infuse the Garlic Oil: In a small bowl, combine the remaining 1 tablespoon of oil with the minced garlic clove. Stir well and set it aside to allow the garlic to infuse its flavor into the oil while the potatoes bake.
  5. Season and Roast: Sprinkle the smashed potatoes evenly with ¼ teaspoon of salt, ¼ teaspoon of freshly ground pepper, and ¼ teaspoon of smoked paprika. Place the baking tray into the preheated oven and roast for 15-20 minutes. You’re looking for the potatoes to turn beautifully golden brown and become wonderfully crispy.
  6. Final Garlic Infusion: Remove the potatoes from the oven. Now, brush the garlic-infused oil that you prepared earlier over all the potatoes. Return them to the oven for an additional two minutes. This brief final bake helps the garlic flavor bloom and adhere to the potatoes.
  7. Top and Serve: Once the potatoes are out of the oven, immediately sprinkle them with 4 oz of crumbled feta cheese, the zest of 2 lemons, and a small bunch of finely chopped chives. Add a little extra freshly ground black pepper if desired. Serve these irresistible Smashed Potatoes with Lemon, Garlic, and Feta hot and enjoy every flavorful, crispy bite!

Perfect Pairings for Smashed Potatoes

The bright, savory, and tangy flavor profile makes them an outstanding partner for a wide array of main dishes. They’re far from just a side; they can truly enhance and complement the star of your meal.

Consider pairing them with:

  • Seafood: Grilled salmon, baked cod, seared scallops, or shrimp benefit from the zesty notes.
  • Chicken: Roasted chicken, grilled chicken breasts, or chicken skewers find a perfect match in these savory potatoes.
  • Pork: Pork chops, tenderloin, or a roasted pork loin are wonderfully complemented by the robust flavors.
  • Steak & Roasts: A classic steak, beef tenderloin, or a hearty roast beef dish will be elevated by these crispy, flavorful potatoes.
  • Vegetarian Options: Serve them alongside a vibrant vegetable tart, grilled halloumi, or a rich mushroom ragout for a complete and satisfying vegetarian meal.

The lemon and feta add a distinctive new flavor element that helps these smashed potatoes stand out from traditional potato sides, making them a memorable addition to any plate.

What If I Don’t Have Feta Cheese?

No feta? No problem! While feta cheese is a key component of this specific recipe, you have several delicious options if it’s unavailable or if you prefer a different cheese. You can easily:

  • Skip the Cheese: The potatoes are incredibly flavorful even without cheese, thanks to the lemon and garlic. You’ll still enjoy a fantastic side dish.
  • Parmesan Cheese: A sprinkle of grated Parmesan cheese will add a salty, umami depth and a different kind of cheesiness that complements the garlic beautifully.
  • Mozzarella Cheese: If you prefer a milder, meltier cheese, shredded mozzarella can be a great topping, offering a gooey texture when warm.
  • Goat Cheese: For a similar tangy profile to feta, crumbled goat cheese is an excellent substitute, adding a creamy texture and distinctive flavor.
  • Cotija Cheese: If you enjoy a saltier, crumbly cheese, cotija can offer a similar texture to feta with its own unique taste.

Ultimately, the choice of whether to add cheese, and which kind, is entirely up to your personal preference and what you have on hand. Don’t let a missing ingredient stop you from enjoying these fantastic smashed potatoes!
