Get ready to transform your mealtime with these irresistible BBQ Chicken and Pineapple Quesadillas – a dish that perfectly harmonizes the smoky richness of barbecue chicken with the refreshing sweetness of pineapple, all nestled within a crispy, cheesy tortilla. This isn’t just a snack; it’s a tantalizing experience designed to awaken your taste buds and redefine your love for quesadillas.

Quesadillas hold a special place in the heart of Mexican cuisine, renowned for their delightful simplicity and incredible versatility. Traditionally, they feature a tortilla filled with cheese, then folded and cooked until the cheese melts and the tortilla crisps up. Over the years, this humble dish has evolved, embracing countless fillings and flavor combinations, making it a global favorite. My personal journey with quesadillas began over a decade and a half ago at a charming Mexican restaurant called “Que Pasa” in Petawawa. I was instantly captivated by the concept, and since then, my own recipe collection has expanded dramatically, always seeking new and exciting twists on this beloved classic.
While some might debate if a quesadilla serves as a quick snack, an enticing appetizer, or a hearty main meal, one thing is universally agreed upon: it’s always incredibly satisfying. These BBQ Chicken and Pineapple Quesadillas epitomize that satisfaction, offering a unique blend of flavors that few other dishes can match. Forget your preconceptions of traditional quesadillas; this recipe introduces a modern, tantalizing approach that combines the robustness of barbecue with the bright, tropical zest of pineapple, creating a sweet and spicy symphony for your palate.
Just last week, I shared a recipe for a Chicken & Bacon Pizza Quesadilla, which redefines pizza night with a crispy tortilla base. Today, we’re diving into an even bolder flavor profile. The combination of tender chicken, richly coated in a sweet and spicy BBQ sauce, fused with juicy, fresh pineapple and melted cheddar cheese, all sealed within a perfectly toasted tortilla, creates an explosion of taste that will have you reaching for another slice before you’ve even finished the first. It’s truly that good, promising a vibrant, crunchy, and utterly delightful meal.
Ingredients You’ll Need for BBQ Chicken and Pineapple Quesadillas
Crafting these delectable quesadillas requires a selection of fresh, high-quality ingredients that work in harmony to create their signature sweet and savory profile. You’ll find the complete, printable recipe card with precise measurements and detailed instructions at the bottom of this post, but here’s a quick overview of the essential components:
- Boneless, Skinless Chicken Breasts: The lean protein base, perfect for shredding and absorbing all the delicious BBQ sauce. Chicken thighs can also be a flavorful alternative for a richer taste.
- Sweet and Spicy BBQ Sauce: This is the heart of the flavor. Choose your favorite brand, or even better, a homemade one, to control the balance of sweetness and heat.
- Yellow Onion: Adds a foundational savory note and aromatic depth that complements the chicken and sauce.
- Whole Wheat Tortillas: Provides a sturdy yet pliable wrapper for your fillings. Whole wheat offers a slightly healthier option with more fiber, but flour or corn tortillas work beautifully too.
- Cheddar Cheese: The quintessential quesadilla component, providing gooey, melted goodness and a sharp flavor that binds everything together. Monterey Jack or a Mexican blend can also be excellent choices.
- Pineapple: The star sweet ingredient, offering a burst of juicy, tropical flavor that cuts through the richness of the BBQ chicken. Fresh is always best, but canned works well in a pinch.
- Cilantro (Optional): A fresh herb garnish that adds a bright, herbaceous finish, enhancing the overall freshness of the dish.

How to Make BBQ Chicken and Pineapple Quesadillas: A Step-by-Step Guide
Creating these delightful quesadillas is a straightforward process, divided into a few simple steps. The key is to perfectly cook your chicken and then assemble the quesadillas for that ideal crispy exterior and molten interior.
- Step One: Prepare and Bake the Chicken
Begin by preheating your oven to 350°F (175°C). Line a baking sheet with aluminum foil for easy cleanup, and then spray the foil lightly with a nonstick cooking spray. Place your boneless, skinless chicken breasts onto the prepared baking sheet. Generously spread ½ cup of your chosen BBQ sauce over the tops of the chicken breasts, ensuring they are well coated. You can use a spoon or even your hands for this. Next, sprinkle the diced yellow onions evenly over the sauced chicken. This step allows the onions to soften and infuse their flavor into the chicken as it bakes. Transfer the baking sheet to the preheated oven and bake for approximately 20 minutes, or until the chicken is thoroughly cooked through and reaches an internal temperature of 165°F (74°C).
- Step Two: Shred the Chicken and Mix with Sauce
Once the chicken is cooked, carefully remove the baking sheet from the oven. Using two forks, shred the chicken directly on the baking sheet or transfer it to a cutting board. The chicken should be tender enough to shred easily. Once shredded, transfer the chicken and the cooked onions into a mixing bowl. Add another ½ cup of BBQ sauce to the bowl and mix everything thoroughly until the shredded chicken and onions are evenly coated in the rich, smoky sauce. This ensures every bite of your quesadilla is packed with flavor.

- Step Three: Assemble the Quesadillas
Lay out 5 whole wheat tortillas flat on a clean surface. On one half of each tortilla, spread an even layer of the BBQ chicken and onion mixture. Next, arrange your thinly sliced pineapple pieces on top of the chicken. The pineapple adds a crucial burst of sweetness and tang. Finally, sprinkle a generous amount of shredded cheddar cheese over the pineapple. On the other half of each tortilla, add about a tablespoon of BBQ sauce. This extra touch of sauce will act as a “glue” when folded and add an extra layer of flavor. Carefully fold the sauce-coated half of each tortilla over the filling, creating a crescent shape.
- Step Four: Cook Until Golden and Crispy
Heat a skillet or a grill pan over medium heat. Lightly spray the pan with non-stick cooking spray. Carefully place the assembled quesadillas onto the hot pan. Cook for 2-3 minutes on the first side, or until the tortilla is golden brown and crispy, and the cheese inside has started to melt. Then, using a spatula, carefully flip each quesadilla and cook for another 1-2 minutes on the second side, or until it’s also golden and crispy. Be mindful, as the second side often cooks faster. Repeat this process until all your quesadillas are cooked to perfection.
- Step Five: Slice and Serve
Once cooked, remove the quesadillas from the pan and place them on a cutting board. Allow them to cool for just a minute or two to make them easier to handle and prevent the filling from spilling out. Slice each quesadilla into wedges, typically two or three per quesadilla. For an optional fresh finish, sprinkle with chopped fresh cilantro before serving. These are best enjoyed immediately while warm and crispy.

Frequently Asked Questions
Can I Use Pre-Cooked Chicken for this BBQ Chicken Quesadilla Recipe?
Absolutely! Using pre-cooked chicken, whether it’s leftover roasted chicken, rotisserie chicken, or even canned chicken, is a fantastic time-saver. You’ll still want to combine the shredded, chopped, or sliced chicken with the diced onions and at least half a cup of BBQ sauce. While you might not need to bake it for the full 20 minutes, a brief bake (around 10-15 minutes) in the oven at 350°F (175°C) is highly recommended. This step allows the flavors to meld beautifully and ensures the chicken is warmed through and thoroughly infused with the BBQ sauce and onion aroma. Just be cautious if your leftover chicken is heavily seasoned with other strong flavors, as it might compete with the barbecue and pineapple, potentially altering the intended taste profile of the quesadilla.

What Kind Of Pineapple Should I Use for Pineapple Chicken Quesadillas?
Both fresh and canned pineapple work wonderfully in this recipe, each offering slightly different characteristics. If using fresh pineapple, ensure it’s ripe for the sweetest, most vibrant flavor and juiciness. Slice it thinly to ensure it cooks evenly and doesn’t create overly bulky quesadillas. When fresh pineapple is in season and readily available, it’s often my preferred choice. However, if using canned pineapple, it is absolutely crucial to drain off all the excess juice thoroughly before placing it on the quesadilla. Failure to do so can lead to a soggy tortilla, which nobody wants! Canned pineapple rings or chunks, sliced thinly, are a convenient option, especially when fresh pineapple isn’t at its peak or is harder to find. Either way, the tropical sweetness is a non-negotiable component that truly elevates the dish.
Do You Dip Your BBQ Chicken and Pineapple Quesadillas in Sauce?
Whether you choose to dip your quesadillas or enjoy them as they are is entirely a matter of personal preference! The quesadillas are incredibly flavorful on their own, with the BBQ sauce baked into the chicken and an optional dab on the tortilla. However, dipping can add another layer of enjoyment. We often serve them without additional sauce, but they pair wonderfully with an extra side of barbecue sauce for those who love an even stronger BBQ kick. If you have a favorite homemade sauce that complements the sweet and savory profile, feel free to use that. For a refreshing contrast, a dollop of sour cream or plain Greek yogurt offers a cool, tangy counterpoint that many find delicious, especially if you opted for a spicier BBQ sauce.
Are These Quesadillas Low Carb?
As prepared, these quesadillas are not inherently low-carb due to the whole wheat tortillas and the sugar content typically found in most BBQ sauces and pineapple. However, for those aiming to reduce their carbohydrate intake, several simple swaps can make them more diet-friendly. You can easily opt for low-carb tortillas, which are widely available in most grocery stores. Additionally, seek out a sugar-free or low-sugar BBQ sauce to significantly cut down on the carbohydrate content. While pineapple itself contains natural sugars, you can moderate the amount used. With these ingredient adjustments, you can enjoy a healthier version of this delicious meal without compromising too much on flavor.

Can You Make BBQ Chicken Quesadillas in a Slow Cooker?
Yes, absolutely! The slow cooker is an excellent tool for preparing the flavorful BBQ chicken and pineapple mixture, making meal prep even easier. To do so, simply spray your slow cooker insert with non-stick spray. Add the boneless chicken breasts, diced onions, about 1 cup of BBQ sauce, and the pineapple (drained if canned) into the slow cooker. Cook on high for 4 hours or on low for 6-8 hours, until the chicken is fork-tender. Once cooked, remove the chicken and shred it within the slow cooker, mixing it with the sauce and pineapple. Then, proceed with step #3 of the stovetop instructions above to assemble and cook your quesadillas in a skillet. This method is perfect for busy days when you want to minimize active cooking time.

How to Store Leftover Quesadillas
While these quesadillas are undoubtedly best enjoyed fresh and hot, you might occasionally find yourself with leftovers. They can be stored in an airtight container in the refrigerator for 2-3 days. Keep in mind that the tortillas will soften slightly over time. To reheat and restore some of that desirable crispiness, I recommend tossing them back onto a skillet over medium heat for a few minutes per side until warmed through and the exterior is golden again. The oven or a toaster oven can also work well for reheating to achieve a crispier texture. For a quick reheat, the microwave will work, but don’t expect the same crispy results.
