The moment I step foot in Greece, my first stop is invariably a local eatery for a succulent gyros. That unmistakable aroma, the perfectly seasoned meat, and the creamy tzatziki are flavors that transport you straight to the heart of the Mediterranean. Today, I’m thrilled to share a recipe that lets you recreate that authentic Greek experience right in your own kitchen. Prepare yourself for the ultimate homemade delight: Pork Gyros with Tzatziki and Sweet Chili Sauce!

Hello, fellow food enthusiasts! Nicky here, from Kitchen Sanctuary, bringing you a robust and satisfying recipe designed for every meat lover out there. This dish isn’t just a meal; it’s a culinary journey, bringing the vibrant street food of Greece directly to your dining table.
Traditional gyros are renowned for their slow-roasted meat, typically shaved from a vertical rotisserie. While replicating that exact setup at home might be a challenge for most, this recipe masterfully captures the very essence and TASTE of those incredible flavors. Forget the elaborate machinery; with a humble Dutch oven, a tender pork shoulder, and a thoughtful blend of herbs and spices, you can achieve a depth of flavor and texture that truly rivals the original.
The secret lies in our slow-cooking method. By gently simmering the pork shoulder, we achieve unparalleled tenderness and juiciness. The meat becomes so flaky and succulent, absorbing every aromatic note from the spices. But we don’t stop there. A final quick fry in a hot skillet is key to developing that irresistible caramelized crust, adding a delightful crunch that perfectly contrasts the tender interior. This dual-stage cooking process ensures every bite is a symphony of textures and flavors.
For the quintessential gyros experience, I wholeheartedly recommend serving this flavorful pulled pork in warm Greek-style pita bread. Pile it high with crisp shredded lettuce, juicy chopped grape tomatoes, and thinly sliced red onion. A generous dollop of homemade tzatziki is non-negotiable – its cool, tangy creaminess is the perfect counterpoint to the rich pork. And for a unique twist that truly elevates this dish, finish with a drizzle of sweet chili sauce. This unexpected element adds a delightful kick, creating a harmonious balance of sweet, savory, and spicy notes that will transport you straight to gyros paradise.

Essential Ingredients for Your Greek Feast
Crafting these delectable pork gyros requires a blend of common pantry staples and fresh ingredients. Each component plays a crucial role in building the layered flavors of this dish:
- For the Flavorful Pork Gyros:
- Celery salt: Adds an earthy, savory undertone.
- Ground cumin: Imparts a warm, aromatic spice essential to Greek flavors.
- Garlic salt: Enhances the savory profile and simplifies seasoning.
- Ground coriander: Offers a sweet, floral, and citrusy note.
- Dried oregano: The quintessential Greek herb, providing an earthy, peppery taste.
- Paprika: Delivers a mild, sweet pepper flavor and beautiful color.
- Salt: A fundamental seasoning to bring out all the flavors.
- Black pepper: Adds a hint of warmth and pungency.
- Boneless rolled pork shoulder joint with rind: The ideal cut for slow cooking, yielding tender, pull-apart meat. The rind helps retain moisture and flavor during cooking and is removed later.
- Vegetable oil: For searing the pork and frying the shredded meat to perfection.
- Garlic: Freshly minced garlic elevates the savory base of the cooking liquid.
- Hot chicken/pork/vegetable stock: Provides moisture and deepens the flavor of the slow-cooked pork.
Homemade Tzatziki – The Cooling Companion
No gyros is complete without a generous dollop of cool, refreshing tzatziki. Making it from scratch ensures the freshest taste:
- Large cucumber: The star ingredient, offering crispness and a refreshing quality.
- Full-fat Greek yogurt: Provides the creamy base and characteristic tang. Full-fat yields the best texture and flavor.
- White wine vinegar: Adds a subtle acidity, balancing the richness.
- Dried dill: A classic herb pairing with cucumber and yogurt, adding a fresh, herbaceous note.
- Garlic: Fresh garlic is crucial for tzatziki’s distinctive pungent kick.
- Granulated sugar: A tiny pinch balances the acidity and enhances the overall flavor.
- Pinch of salt: To season and draw out moisture from the cucumber.
To Serve Your Perfect Gyros
Assemble your gyros with these fresh, vibrant accompaniments:
- Warm Greek pita breads: The soft, pillowy canvas for your delicious fillings.
- Shredded romaine lettuce: Adds a crisp texture and fresh green component.
- Chopped grape tomatoes: Bursting with juicy sweetness and color.
- Sliced red onion: Provides a sharp, pungent bite that complements the rich pork.
- Sweet chili sauce: The secret ingredient that adds a delightful sweet-spicy kick, enhancing the entire dish.

Crafting Your Culinary Masterpiece: Pork Gyros with Tzatziki and Sweet Chili Sauce
Follow these detailed steps to create a truly unforgettable Greek feast:
- Step One: Prepare the Pork for Slow Cooking. Begin by preheating your oven to 350°F (175°C). In a shallow dish or plate, thoroughly combine the celery salt, ground cumin, garlic salt, ground coriander, dried oregano, paprika, salt, and black pepper. This spice blend forms the heart of our gyros flavor. Take your boneless rolled pork shoulder joint and generously roll it in this spice mix, ensuring all meaty surfaces are well-coated. There’s no need to cover the rind at this stage. This pre-seasoning allows the flavors to truly penetrate the meat as it cooks.
- Step Two: Sear and Simmer. Heat 2 tablespoons of vegetable oil in a Dutch oven or a large, thick-based, oven-safe pan over medium-high heat until shimmering. Carefully place the seasoned pork joint into the hot oil and sear it on all sides (except the rind side) until beautifully browned. This searing step locks in moisture and develops a rich, savory crust. Once seared, add the minced garlic and hot chicken, pork, or vegetable stock to the pan. Bring the liquid to a boil, then immediately turn off the heat. Cover the Dutch oven with a tight-fitting lid and transfer it to your preheated oven. Allow the pork to cook for 2 ½ to 3 hours, or until it is incredibly tender and can be easily pulled apart with a fork. During cooking, check the liquid level a couple of times; if it starts to run dry, add about half a cup of hot water from a kettle to maintain moisture.
- Step Three: Begin the Tzatziki. While the pork is slow-cooking, it’s the perfect time to prepare your refreshing tzatziki. Peel the large cucumber and slice it in half lengthwise. Using a teaspoon, scoop out and discard the watery seeds from the center. Grate the cucumber using a hand grater. This creates fine strands that will integrate beautifully into the yogurt.
- Step Four: Finish the Tzatziki. Place the grated cucumber in a clean kitchen towel or paper towels and squeeze out as much excess liquid as possible. This crucial step prevents the tzatziki from becoming watery. Transfer the squeezed cucumber to a bowl and add the full-fat Greek yogurt, white wine vinegar, dried dill, minced garlic, granulated sugar, and a pinch of salt. Mix all the ingredients together until well combined. Cover the bowl and refrigerate the tzatziki until you’re ready to serve, allowing the flavors to meld and chill.
- Step Five: Prepare the Pulled Pork. Once the pork is cooked to perfection, carefully remove the Dutch oven from the oven and take off the lid. Transfer the incredibly tender meat to a clean chopping board. At this point, you can discard the cooking liquid, which will be quite salty and concentrated, along with the pork rind. Using two forks, shred the pork into small, delectable chunks. The meat should be so tender that it pulls apart effortlessly.
- Step Six: Crispy Finish for the Pork. Heat the remaining 2 tablespoons of vegetable oil in a large skillet over high heat. Add the shredded pork to the hot skillet. Fry the pork, turning it a few times during cooking, until it becomes wonderfully golden brown and develops a slightly crispy, caramelized texture. This usually takes about 6-8 minutes. Depending on the size of your skillet, you may need to fry the pork in two batches to avoid overcrowding the pan and ensure even crisping.
- Step Seven: Assemble and Serve. Arrange the warm Greek pita breads on individual plates. Layer them with a base of shredded romaine lettuce, chopped grape tomatoes, and thinly sliced red onion. Generously spoon the crispy, flavorful gyros meat over the vegetables. Add a healthy dollop of your chilled, homemade cucumber tzatziki. For that signature sweet and spicy kick, drizzle each gyros with sweet chili sauce just before serving. Enjoy your magnificent homemade Greek gyros!
Essential Kitchen Tools for Success
While you don’t need a professional kitchen setup, having these key pieces of equipment will undoubtedly help you achieve incredible results and make your cooking experience smoother:
- Cast Iron Skillet: Essential for achieving that perfect caramelized crust on your shredded pork, distributing heat evenly for superior browning.
- Utility Cutting Board: A sturdy and reliable surface for preparing your ingredients, from slicing vegetables to shredding the tender pork.
- Cast Iron Dutch Oven: The workhorse of this recipe, ideal for slow-cooking and braising, ensuring your pork shoulder becomes incredibly tender and flavorful. Its heavy construction maintains consistent heat for hours.

Perfect Pairings: What to Serve Alongside Your Pork Gyros
These pork gyros are a meal in themselves, but if you’re looking to complete your Greek-inspired feast, consider these delightful side dishes that complement the flavors beautifully:
- Cheesy Potato Skins: A comforting and savory option that adds a touch of indulgence.
- Greek Pasta Salad: A refreshing and vibrant salad with olives, feta, and fresh vegetables, perfectly echoing the Mediterranean theme.
- Air Fryer Zucchini Chips: A lighter, crispy vegetable option that’s a healthy alternative to traditional fries.
- Crispy Greek Fries: Often served with gyros, these golden fries can be seasoned with oregano and salt.
- Simple Green Salad: A light vinaigrette-dressed mixed greens salad can offer a refreshing contrast.
Expert Tips and Tricks for Gyros Perfection
Achieve the best possible results with these valuable insights and cooking hacks:
- Marinate for Maximum Flavor: While this recipe calls for rolling the pork in spices, for an even deeper flavor, consider allowing the spiced pork to marinate in the refrigerator for at least 4 hours, or ideally overnight, before cooking. This allows the aromas to fully infuse into the meat, yielding a more profound and satisfying taste.
- The Sweet-Sour Secret: Don’t be afraid to experiment with your cooking liquid! A dash of white wine vinegar and a tablespoon of honey added to the stock before slow cooking can add incredible depth and complexity to your pork. The vinegar provides a subtle tang that brightens the meat, while the honey contributes a hint of sweetness that caramelizes beautifully.
- Master Your Spice Blend: Ensure you thoroughly mix all the dry spices together on your plate before rolling the pork. An uneven mix can result in concentrated pockets of a single spice, which might overwhelm certain bites. A uniform blend guarantees balanced flavor in every piece of meat.
- Tzatziki Consistency is Key: If your tzatziki turns out thinner than desired, a tiny pinch of xanthan gum (start with 1/8 teaspoon) can help thicken it without altering the flavor. However, use it sparingly, as too much can create an undesirable gummy texture. A good squeeze of the cucumber usually prevents this issue.
- Avoid Overmixing Tzatziki: Resist the urge to blend your tzatziki vigorously in a food processor. Overmixing can break down the cucumber and yogurt too much, leading to a watery and sometimes bitter result. Hand-mixing gently preserves the texture and freshness.
- Drain the Cucumber Thoroughly: This is arguably the most critical step for perfect tzatziki. After grating the cucumber, use a clean kitchen towel or paper towels to squeeze out every possible drop of water. This prevents your tzatziki from becoming a runny, diluted mess and ensures a rich, creamy consistency.
Creative Variations and Smart Substitutions
This recipe is wonderfully versatile, allowing for easy adjustments to suit different tastes or dietary needs:
- Alternative Proteins: While pork is traditional, you can easily substitute it with boneless, skinless chicken thighs or beef chuck for a different flavor profile. If opting for chicken, reduce the slow-cooking time. For a fantastic vegetarian gyros, try slow-cooked, heavily spiced chickpeas or marinated grilled halloumi cheese.
- Lighter Tzatziki: To reduce calories and fat in your tzatziki, feel free to use low-fat or fat-free Greek yogurt. Just be aware that the texture might be slightly less rich, but the tangy flavor will remain.
- Spice Blend Customization: Experiment with your favorite Greek or Mediterranean spices. A pinch of cinnamon, a touch of sumac, or even a hint of nutmeg can add interesting dimensions to the pork seasoning.
- Sauce Alternatives: If sweet chili isn’t your preference, try a drizzle of sriracha for pure heat, a mild hot sauce, or even a squeeze of fresh lemon juice for brightness.
Storing Your Delicious Gyros
To maintain the freshness and texture of each component, I highly recommend storing all elements of this dish separately. This prevents your delicious pitas from becoming soggy and ensures everything stays crisp and flavorful:
- Pork Mixture: Store the shredded, cooked pork in an airtight container in the refrigerator for up to 3-4 days.
- Tzatziki: Keep the homemade tzatziki in a separate airtight container in the refrigerator for up to 3-4 days. Stir well before serving.
- Pita Breads: Warm Greek pita breads are best stored at room temperature in an airtight bag or container to prevent them from drying out.
- Vegetables: Prepare and store shredded lettuce, chopped tomatoes, and sliced red onion in separate containers in the refrigerator, ideally dressing them just before serving.
Can I Freeze Pork Gyros?
Yes, you can absolutely freeze components of this recipe, particularly the slow-cooked pork, to enjoy later. This makes meal prep a breeze!
- Freezing the Pork: After slow-cooking and shredding the pork, allow it to cool completely. You can then freeze it in an airtight freezer-safe container or in individual serving portions using freezer bags. Ensure as much air as possible is removed from the bags to prevent freezer burn.
- Defrosting and Reheating: When you’re ready to enjoy, simply defrost the frozen pork in the refrigerator overnight. Reheat it gently in a skillet or microwave until heated through, then proceed with the final crisping step in a hot pan as per the recipe instructions. The tzatziki is best made fresh and does not freeze well due to its cucumber and dairy content.

- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 4 lb boneless rolled pork shoulder joint with rind*
- 4 tbsp vegetable oil
- 3 cloves garlic peeled and minced
- 3 cups hot chicken/pork/vegetable stock
Tzatziki
- ½ large cucumber
- 1 cup full fat Greek yogurt
- 1 tsp white wine vinegar
- 1 tsp dried dill
- ½ small clove of garlic peeled and minced
- ½ tsp granulated sugar
- pinch salt
To Serve
- Warm Greek pita breads
- Shredded romaine lettuce
- Chopped grape tomatoes
- Red onion sliced
- Sweet chili sauce
Instructions
-
Preheat the oven to 350°F (175°C). Mix together the celery salt, cumin, garlic salt, ground coriander, oregano, paprika, salt and black pepper on a plate. Roll the pork joint in the spice mix so that all the meaty sides are well covered (no need to cover the rind).
-
Heat 2 tbsp of the oil in a Dutch oven or large thick-based, oven-proof pan until hot. Sear the meat on all sides (except the rind side) until browned, then add the garlic and stock. Bring to a boil, then turn off the heat. Place a lid on and cook in the oven for 2 ½ – 3 hours, or until the meat pulls away easily with a fork. Check the pork a couple times during cooking to ensure there’s always some liquid; if it starts to go dry, top up with half a cup of hot water from the kettle. When cooked, remove from the oven and take off the lid.
-
Next, prepare the tzatziki. Peel the cucumber and slice it in half lengthwise. Remove the seeds by scooping them out with a teaspoon. Grate the cucumber with a hand grater, then squeeze all of the liquid out using clean hands. Place the squeezed cucumber in a bowl and add the rest of the tzatziki ingredients (full fat Greek yogurt, white wine vinegar, dried dill, minced garlic, granulated sugar, and a pinch of salt). Mix together, then cover and refrigerate until ready to serve.
-
Carefully remove the meat from the pan and place it on a chopping board. Discard the cooking liquid (it will be very salty) and the pork rind. Pull the meat into small chunks using two forks.
-
Heat the remaining oil in a large skillet and add the shredded pork. Fry on high heat, turning a few times during cooking, until golden brown and slightly crispy (about 6-8 minutes). You may need to do this in two batches, depending on the size of your pan.
-
Place the warm pitas on plates along with the lettuce, tomato, and red onion. Top with the gyros meat and the cucumber tzatziki. Drizzle generously with sweet chili sauce before serving.
