Grilled Butter Chicken Pasta Salad: A Summer Culinary Fusion

This month, my culinary challenge was to infuse a beloved summer BBQ staple with an unexpected, yet incredibly delicious, twist. My solution? A delightful journey to India! By blending the rich, aromatic flavors of traditional Butter Chicken with the refreshing ease of a classic pasta salad, I’ve created a dish that’s truly unforgettable and perfect for any summer occasion.

Imagine tender, perfectly grilled chicken, marinated in a creamy, mildly spiced butter chicken sauce, then tossed with al dente pasta, crisp vegetables, and a luscious dressing that ties everything together. This isn’t just another pasta salad; it’s a gourmet experience that brings global flavors right to your backyard BBQ. It’s hearty enough to stand alone as a main course, yet perfectly complements other grilled delights as a unique side.

Why You’ll Love This Indian-Inspired Pasta Salad

  • **Explosion of Flavor:** It’s a harmonious blend of creamy, savory, and subtly spicy notes, creating a taste profile unlike any other pasta salad you’ve tried. The Patak’s Butter Chicken Curry Paste delivers authentic Indian spices without any fuss.
  • **Effortlessly Elegant:** While the flavors are sophisticated, the preparation is surprisingly straightforward, making it perfect for busy weeknights or relaxed weekend entertaining.
  • **Crowd-Pleaser:** This salad is a guaranteed hit at any gathering. Its unique character will spark conversations and leave your guests asking for the recipe.
  • **Versatile & Adaptable:** Serve it warm or chilled, as a fulfilling main course, or as a refreshing accompaniment to grilled meats or fish.
  • **Make-Ahead Marvel:** Prepare it in advance, allowing the flavors to meld beautifully, making your event day stress-free.

Crafting the Perfect Grilled Butter Chicken

The secret to the succulent chicken in this salad lies in a simple yet powerful marinade. We start by marinating boneless, skinless chicken breasts in a blend of Patak’s Butter Chicken Curry Paste, sour cream, and mayonnaise. This combination does wonders: the curry paste infuses the chicken with its signature blend of Indian spices, while the sour cream and mayonnaise work as tenderizers, ensuring every bite is moist and flavorful. Marinating for at least 3-4 hours, or even overnight, allows these flavors to deeply penetrate the chicken, resulting in an exceptionally tender and aromatic grilled component.

Once marinated, the chicken is ready for grilling. Whether you prefer the convenience of an indoor grill pan or the authentic char of an outdoor BBQ, aim for medium-high heat. Grill each side until the chicken is beautifully golden-brown and cooked through, reaching an internal temperature of 165°F (74°C). The slight smokiness from the grill adds another layer of complexity to the butter chicken flavor, making it truly special. After grilling, let the chicken rest for a few minutes before chopping it into bite-sized pieces. This resting period helps retain the juices, ensuring maximum tenderness.

Assembling Your Flavorful Pasta Salad

While the chicken marinates and grills, you can prepare the other elements of this vibrant salad. Choose your favorite pasta – I personally love rotini for its spiral shape, which cleverly captures the creamy dressing and small vegetable pieces, making every forkful a perfect bite. Cook the pasta al dente according to package directions, then drain and rinse it under cold water to stop the cooking process and prevent it from sticking together. This step is crucial for achieving that ideal pasta salad texture.

For a refreshing crunch and burst of color, I incorporate fresh, crisp vegetables. Halved cherry tomatoes add a sweet, juicy counterpoint, while diced green peppers contribute a mild, earthy flavor and satisfying crispness. Chopped green onions provide a subtle oniony zest that brightens the entire dish. Feel free to customize with other vegetables you love, such as diced cucumber, red onion, or even a sprinkle of fresh cilantro for an extra herbaceous note.

Now, for the “magic”—the dressing that transforms this from a collection of ingredients into a cohesive, flavorful salad. This creamy concoction mirrors the chicken marinade, featuring a generous amount of Patak’s Butter Chicken Curry Paste, balanced with mayonnaise and sour cream. It’s designed to be smooth, rich, and distinctly butter chicken-flavored, but intentionally mild, ensuring it appeals to a wide range of palates. Don’t let the “curry” in the name deter you; this paste provides incredible depth of flavor rather than overwhelming heat. A pinch of salt brings all the flavors into sharp focus. Once prepared, this luscious dressing is gently folded into the pasta, chicken, and vegetables, coating everything beautifully.

Tips for the Ultimate Grilled Butter Chicken Pasta Salad

  • **Don’t Rush the Marinade:** For maximum flavor and tenderness, allow the chicken to marinate for the full recommended time of 3-4 hours. Overnight marination in the refrigerator yields even better results.
  • **Perfectly Grilled Chicken:** Ensure your grill is at medium-high heat. Sear the chicken to get a nice crust, then finish cooking until it reaches 165°F (74°C) internally using a meat thermometer. Avoid overcooking, which can lead to dry chicken.
  • **Al Dente Pasta is Key:** Overcooked pasta becomes mushy in a salad. Cook it until it’s just tender with a slight bite, then cool it completely before mixing.
  • **Chill for Flavor Fusion:** While tempting to dig in immediately, chilling the pasta salad for 1-2 hours before serving is essential. This allows the flavors to meld and deepen, resulting in a much more cohesive and delicious dish.
  • **Adjust Spice Levels:** If you prefer a spicier kick, you can add a pinch of cayenne pepper or a dash of your favorite hot sauce to the dressing. For a milder taste, you can slightly reduce the amount of curry paste.
  • **Consider Your Pasta Shape:** While rotini is excellent, other shapes like fusilli, penne, or even farfalle (bow-tie pasta) work well for holding the creamy dressing.

Ingredients

Grilled Butter Chicken

  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 tbsp Patak’s Butter Chicken Curry Paste
  • 2 boneless skinless chicken breasts

Pasta Salad

  • 3 cups pasta of your choice uncooked
  • 3 green onions chopped
  • cup cherry tomatoes halved
  • 2 green peppers diced
  • 1 tbsp Patak’s Butter Chicken Curry Paste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ½ tsp salt

Instructions

Grilled Butter Chicken

  • In a small bowl, combine Patak’s Butter Chicken Curry Paste, mayonnaise, and sour cream. Spread this marinade evenly over the uncooked chicken breasts. Place the marinated chicken in the fridge and allow it to marinate for a minimum of 3 to 4 hours, or preferably overnight, to maximize flavor and tenderness.
  • Preheat your grill (either outdoor BBQ or indoor grill pan) to medium-high heat. Grill the marinated chicken breasts on both sides until they are cooked through and a meat thermometer inserted into the thickest part registers 165°F (74°C). This usually takes about 6-8 minutes per side, depending on thickness.
  • Once the chicken is cooked, remove it from the grill and set it aside to cool slightly. After it has cooled, roughly chop the grilled chicken into bite-sized pieces and set aside for assembly.

Pasta Salad

  • Cook your chosen pasta according to the package directions until it is al dente. Drain the pasta and rinse it thoroughly under cold water to stop the cooking process and cool it down. Set aside.
  • In a large mixing bowl, combine the chopped grilled chicken, green onions, halved cherry tomatoes, diced green pepper, and the cooked and cooled pasta.
  • Prepare the creamy dressing: In a separate small bowl, stir together the mayonnaise, sour cream, remaining Patak’s Butter Chicken Curry Paste, and salt until well combined and smooth. Pour this delicious dressing over the pasta salad mixture and stir gently to ensure all ingredients are evenly coated.
  • For best results, cover the bowl and chill the Grilled Butter Chicken Pasta Salad in the refrigerator for at least 1 to 2 hours before serving. This allows the flavors to fully meld and develop. Serve cold and enjoy!
