Ingredients

 

 

  • ¾ cup heavy cream
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp paprika
  • 1 tsp white granulated sugar
  • 1 tsp coarse kosher salt
  • ½ tsp ground black pepper
  • 20 ounces frozen corn defrosted and well-drained
  • ¾ cup all-purpose flour
  • ¼ cup cornmeal
  • ¼ cup Parmesan cheese grated
  • 3-5 tbsp avocado oil
  • Sour cream and green onions for garnish optional

Instructions

  • In a large mixing bowl, combine the heavy cream, eggs, baking powder, paprika, white granulated sugar, coarse kosher salt, and black pepper. Whisk with a fork until the mixture is smooth and well combined.
  • Add the defrosted and well-drained corn to the bowl with the wet ingredients. Mix thoroughly until the corn is evenly distributed.
  • Now, add the all-purpose flour, cornmeal, and grated Parmesan cheese to the bowl. Mix gently until just combined. Be careful not to overmix the batter.
  • Heat a large non-stick sauté pan over medium heat. Add 1 tablespoon of avocado oil to the pan and let it shimmer.
  • Scoop ¼ cup portions of the corn fritter batter into the hot pan. Use the back of the measuring cup or a spoon to gently spread each portion into a flat, round fritter. Avoid overcrowding the pan to ensure even cooking.
  • Cook the fritters for 2-3 minutes per side, or until they are beautifully golden brown and crispy. Ensure they are cooked through before flipping.
  • Once cooked, transfer the corn fritters to a plate lined with paper towels or a clean kitchen towel to absorb any excess oil. Immediately sprinkle with a pinch of salt while they are still warm.
  • Continue frying the remaining batter in batches, adding more avocado oil to the pan as needed between batches to maintain enough oil for cooking.
  • Serve the corn fritters warm. Optionally, garnish with a dollop of sour cream and a sprinkle of fresh green onions for added flavor and presentation. Enjoy your homemade crispy corn fritters!
