  • 12 chicken drumsticks
  • 2 tbsp extra virgin olive oil
  • 2 ½ cups Yukon Gold potatoes, diced
  • 1 cup green beans, trimmed
  • 3 carrots, peeled and cut into ¼ inch strips
  • Zest of one lemon
  • Juice from one lemon
  • 2 cloves garlic, minced
  • 2 sprigs thyme leaves
  • ¼ cup butter, softened
  • ½ cup chicken stock
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F (230°C).
  2. In a large bowl, combine the diced potatoes, carrots, and trimmed green beans with olive oil, salt, and pepper. Toss well to combine. Spread the vegetables in a single layer onto a large baking sheet.
