This no-bake cherry cheesecake is an absolute masterpiece of flavor and texture, designed for those who appreciate the finer things in life but also value ease in the kitchen. The star components—a robust Oreo crust, a silky-smooth cream cheese filling, and a luscious cherry topping—come together to create an unforgettable dessert experience.

Why This Cherry Cheesecake is a Must-Try

If you’re a fan of Oreos (and who isn’t?), then this cheesecake is your dream come true. We’re talking about a significant quantity of these iconic chocolate cookies, forming not only the sturdy, flavorful base but also subtly integrated into the creamy filling. While a few might “accidentally” disappear during preparation, the generous use of Oreos ensures every bite is infused with that irresistible chocolatey crunch and depth of flavor. This recipe is perfect for those occasions when you truly need an indulgent treat, a dessert that feels both comforting and extraordinarily special.

Beyond the sheer indulgence, what makes this cheesecake truly remarkable is its no-bake nature. Forget the water baths, the cracks, and the delicate balancing act of traditional baked cheesecakes. This recipe simplifies the process without sacrificing an ounce of flavor or elegance. It’s an ideal choice for both seasoned bakers and newcomers alike, promising a foolproof path to a stunning dessert.

Achieving the Perfect Oreo Crust: Tips and Tricks

The foundation of any great cheesecake is its crust, and for this recipe, the Oreo crust truly shines. Getting that perfect, uniform base is simpler than you might think. After crushing your Oreos into coarse crumbs (a food processor makes this quick and easy, but a zip-top bag and a rolling pin work just as well!), combine them with melted unsalted butter. The key to a sturdy, even crust lies in how you press it into your springform pan.

  • **Even Distribution:** Ensure the Oreo and butter mixture is evenly spread across the bottom and slightly up the sides of the pan.
  • **Firm Pressing:** Use the bottom of a flat measuring cup or a clean, smooth glass to firmly press the crumbs into place. This compaction is crucial for preventing the crust from crumbling when sliced.
  • **Edge Perfection:** For crisp edges, use the back of a spoon or your fingertips to gently push the crust mixture up the sides of the pan, creating a slight rim. A little patience here will result in a beautifully defined crust that holds the creamy filling perfectly.
  • **Chilling is Key:** Don’t skip the chilling step. Refrigerating the crust while you prepare the filling helps it set and become firm, ensuring it won’t fall apart.

Alternative Crust Ideas for Your Cheesecake

While the Oreo crust is a phenomenal choice for its rich chocolate flavor and satisfying crunch, you absolutely have options if you’re looking for a different profile. A classic graham cracker crust is always a fantastic alternative. Simply prepare it as you normally would, pressing it firmly into the pan to create a solid base. If you’re feeling adventurous and want to introduce a subtle twist, consider using Golden Oreos for the crust. Their vanilla flavor would provide a delightful contrast to the tart cherry topping, offering a unique and equally delicious experience.

Crafting the Luscious Homemade Cherry Topping

The vibrant, glossy cherry topping is what truly elevates this cheesecake, adding a burst of fresh flavor and a stunning visual appeal. The beauty of a homemade cherry topping is its versatility and the depth of flavor you can achieve. You have several choices when it comes to the cherries themselves:

  • **Fresh Cherries:** When in season, fresh, pitted cherries offer the most vibrant flavor and texture.
  • **Frozen Cherries:** These are an excellent year-round option. Thaw them slightly before using, and you might find they release a bit more liquid, which contributes to the sauce.
  • **Tinned Cherries:** For ultimate convenience, tinned cherries (drained of their liquid) can also be used. I personally enjoy using a mixture of tinned and fresh cherries. This approach results in a beautiful medley of different shades and textures, making the topping even more visually appealing.

To deepen the flavor of your cherry topping, consider a splash of kirsch or cherry brandy. This addition truly takes the topping to the next level, infusing it with a subtle, sophisticated warmth. If you prefer to omit alcohol, a little cherry jelly mixed with water, or even a drop of cherry or almond extract, can provide a similar flavor boost without the alcohol content. The goal is a rich, fruity, slightly tart sauce that perfectly complements the sweet cheesecake.

Can I Use Canned Cherry Pie Filling?

Absolutely! While our homemade cherry topping offers an unparalleled depth of flavor, sometimes convenience is key. If you’re short on time or simply want to simplify the process, feel free to use canned cherry pie filling. It will slightly alter the flavor profile of the cheesecake, but it still makes for a delicious dessert. Purchase one or two cans, depending on how generously you like your topping, and spoon it over the chilled cheesecake. It’s a fantastic shortcut that doesn’t compromise too much on enjoyment.

The Magic of No-Bake: A Simple & Indulgent Dessert

One of the most appealing aspects of this Cherry Cheesecake with Oreo Crust is that it’s a completely no-bake dessert. This means no oven time, no risk of cracks, and a significantly simpler preparation process. The crust sets in the fridge, the filling whips up in minutes, and the topping simmers gently on the stovetop. It’s an incredibly easy way to create a dessert that tastes like it took hours of effort.

The no-bake method relies on the cream cheese and whipped heavy cream to set and firm up in the refrigerator. This results in a lighter, airier texture compared to traditional baked cheesecakes, yet it remains wonderfully creamy and rich. The simplicity makes it a fantastic recipe for beginners, or for anyone looking for a quick yet impressive dessert option.

Step-by-Step Guide: How to Make This Irresistible Cheesecake

Creating this stunning cherry cheesecake is a straightforward process, broken down into three main components: the crust, the filling, and the topping. Here’s a detailed overview to guide you:

1. Prepare the Oreo Crust

Begin by crushing your Oreo cookies in a food processor until they form coarse crumbs. Transfer these crumbs to a bowl, add melted unsalted butter, and mix until well combined. Press this mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Use a flat-bottomed measuring cup to achieve an even and compact crust. Once pressed, place the pan in the refrigerator to chill while you prepare the filling.

2. Whip Up the Creamy Cheesecake Filling

In a large mixing bowl, combine the full-fat cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until the mixture is smooth and lump-free. In a separate bowl, whip the heavy cream until it forms soft peaks. Gently fold the cream cheese mixture into the whipped cream, then carefully fold in the roughly broken Oreo cookie pieces. Spoon this velvety filling over the chilled Oreo crust, smoothing the top with the back of a spoon or an offset spatula. Return the cheesecake to the refrigerator to chill for at least an hour while you make the cherry topping.

3. Craft the Homemade Cherry Topping

In a saucepan, combine your pitted cherries (fresh, frozen, or canned), brown sugar, fresh lemon juice, optional kirsch or cherry brandy, and vanilla extract. Heat this mixture over low heat, with the lid on, for about 3-5 minutes, or until the sugar has fully dissolved and the liquid is gently bubbling. In a small separate bowl, whisk together cornstarch and water to create a slurry. Pour this cornstarch mixture into the simmering cherry mixture while continuously stirring. You’ll notice the sauce will thicken quite quickly. Remove the pan from the heat and allow the cherry topping to cool completely. For faster cooling, you can spread it out on a plate.

4. Assemble and Chill

Once the cherry topping has cooled, spoon it generously over the chilled cheesecake filling. Place the entire cheesecake back into the refrigerator for at least another hour, or until thoroughly chilled and set. This final chill time ensures the cheesecake is firm, easy to slice, and truly delicious.

Storing Your Cherry Cheesecake for Freshness

Due to its creamy, perishable ingredients, this cherry cheesecake must be kept refrigerated. The cream cheese base and whipped cream require consistent chilling to maintain their texture and prevent spoilage. It’s generally recommended not to leave your cheesecake out on the counter for more than two hours at a time, as bacteria can multiply rapidly at room temperature. Always ensure it’s tightly covered to prevent it from absorbing other odors from your fridge and to maintain its moisture.

How Long Will Cherry Cheesecake Last in the Fridge?

When properly stored in an airtight container in the refrigerator, this homemade cherry cheesecake will stay fresh and delicious for 3 to 4 days. While this is a general guideline, always use your best judgment. If the cheesecake develops an unusual odor, color, or texture, it’s best to discard it.

Chocolate and cherry combine for this decadent dessert! The sweet cheesecake filling melds perfectly with the crunchy cookie crust for a delicious and beautiful treat.

Ingredients

Oreo Base

  • 30 Oreo cookies, broken into rough pieces
  • 7 tbsp unsalted butter, melted

Filling

  • 2 packages full-fat cream cheese (8oz/250g packages)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ¾ cup heavy cream
  • 12 Oreo cookies, roughly broken up

Cherry Topping

  • 3 cups whole pitted cherries*
  • ½ cup brown sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp kirsch or cherry brandy (optional)
  • ½ tsp vanilla extract
  • 2 tbsp cornstarch mixed with 3 tbsp water

Instructions

  1. First, make the base. Place the Oreos in a food processor and pulse until you have coarse crumbs. Stir in the melted butter and then transfer to a 9-inch baking tin with a removable base. Use a measuring cup to firmly and evenly squash the crumbs into the base and up the sides of the tin. Use a teaspoon to level the top of the sides. Place in the fridge to chill whilst you make the filling.
  2. Place the cream cheese, powdered sugar, and vanilla extract in a large mixing bowl and whisk until smooth.
  3. In a separate bowl, whisk the heavy cream to soft peaks. Fold the cream cheese mix into the whipped cream and then carefully fold in the roughly broken Oreos. Spoon this mixture into the biscuit base and smooth with the back of a spoon. Place in the fridge to chill for an hour whilst you make and cool the cherry topping.
  4. Place the cherries in a pan with the sugar, lemon juice, kirsch/cherry brandy (if using), and vanilla extract. Heat on low with the lid on for 3-5 minutes until the sugar has dissolved and the liquid is bubbling lightly. Pour in the cornstarch mixture whilst stirring. The sauce should thicken quite quickly. Turn off the heat and leave to cool (you can pour onto a plate to cool faster).
  5. Once the cherries are cool, pour them over the cream cheese topping and place back in the fridge until completely chilled – about an hour. Then serve!

Notes

*These can be frozen, fresh, or canned cherries that have been drained (discard the liquid as it’s too weak to add a good flavor to the cheesecake) – or even a mixture. I used half canned cherries and half fresh.
