- 1 ½ lb baby gold potatoes, quartered
- 12 oz frozen crinkle cut carrots
- 1 medium red onion, large diced
- 1 tbsp extra virgin olive oil

- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 6 slices Colby Jack cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Place the ground beef with onion soup mix into a large bowl and mix to combine.
