Ingredients

  • 1 tbsp vegetable oil
  • 2 boneless skinless chicken breasts cut into chunks
  • 1 yellow onion chopped
  • 4 garlic cloves minced
  • 1 can white kidney beans 15.5oz/540ml can, drained and rinsed
  • 1 jar green salsa 16oz/473ml jar
  • 1 cup corn
  • 4 cups chicken broth
  • 1 tsp chili powder
  • salt and pepper to taste
  • green onions chopped, for garnish

Instructions

  1. Add vegetable oil to a large pot over medium heat. Add chicken, onion and garlic and stir to combine. Cook for about 10 minutes or until chicken is cooked and onions are softened.
  2. Add the white kidney beans, green salsa, chicken broth, corn, chili powder and season with salt and pepper. Stir.
  3. Bring to a boil. Reduce heat to medium low and simmer for 30 minutes, uncovered. Serve hot.
  4. Garnish with green onions and/or sour cream, if desired.
