Despite this confidence gap, there’s an overwhelming consensus: 98% of parents believe it’s important to cook with their children. This shared belief is a powerful starting point. I wholeheartedly agree and have been making a conscious effort to involve my girls more actively in meal preparation. A few weeks ago, we enthusiastically participated in the Ben’s Beginners movement alongside my daughter Bridget and my cousin’s son, Connor. Our mission was to prepare Black Bean & Rice Open-Faced Tacos, a fantastic way to introduce fundamental cooking techniques while emphasizing that cooking is indeed an indispensable life skill.

Our Delicious Journey: Crafting Meatballs & Rice with Bridget

One particular lesson that stood out for us was preparing “Meatballs & Rice.” This recipe offered a wonderful opportunity to focus on crucial culinary basics, especially mastering measurement and pouring. Bridget meticulously measured out the precise quantities of rice and water required, taking great care to ensure accuracy – a practical application of math in the kitchen!

But her absolute favorite part was undoubtedly preparing the meatballs themselves. With infectious enthusiasm, she whisked together the wet ingredients, her eyes alight with anticipation. The real joy came when it was time to mix everything by hand. She loved getting her hands messy, molding the meatball mixture into perfect, uniform spheres. This tactile experience is invaluable for children, allowing them to engage all their senses in the cooking process and truly connect with the food they are creating.

We all found it incredibly tasty and have already planned to incorporate this recipe into our regular family meal rotation.

These simple beef meatballs are served with a spiced tomato sauce over a bed of rice. There’s rice in the meatballs too for the fluffiest texture!

Ingredients

Meatballs

  • 1 cup long grain rice
  • 1 small yellow onion finely chopped
  • 1 clove garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 large egg
  • ¼ cup water
  • 1 lb lean ground beef
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp allspice

Spiced Tomato Sauce

  • 1 can Petite Diced Tomatoes with Garlic (15oz can)
  • ½ cup water
  • ½ tsp cumin
  • ¼ tsp allspice
  • ¼ tsp cinnamon

Instructions

  1. Preheat oven to 375°F.
  2. Cook rice according to package directions.
  3. In a medium bowl, whisk to combine onion, garlic, parsley, egg and water.
  4. Add ground beef, 2 ½ cups cooked Uncle Ben’s rice, salt, pepper and allspice into the bowl and mix well with your clean hands.
  5. Shape meat into 1 ½ to 2 inch balls (about golf ball size) and arrange in a lightly greased 8×8 baking dish.
  6. In a small bowl, mix together sauce ingredients. Pour over top of meatballs and cover with foil.
  7. Bake for 20 to 25 minutes* or until cooked through.

Notes: Check meatball temperature with a meat thermometer to ensure they are cooked. We had to leave ours in about 20 minutes longer than the original recipe to reach the proper temperature.
