This creamy and light Lemon Blueberry Fluff is a delightful no-bake dessert salad, perfect for potlucks and gatherings. Its zesty lemon and juicy blueberry combination makes it an easy, refreshing hit.

Ingredients

  • 1 package (8oz/250g) cream cheese, softened
  • ½ cup powdered sugar
  • 8 oz Cool Whip, thawed
  • Juice of 1 fresh lemon
  • ¼ tsp lemon extract (optional)
  • 3 cups mini marshmallows
  • 18 oz fresh blueberries
  • Lemon zest for topping (optional)
  • Sliced almonds for topping (optional)

Instructions

  1. Add softened cream cheese and powdered sugar to a large mixing bowl. Beat together with a hand mixer on medium-high speed until smooth.
  2. Gently fold in the thawed Cool Whip, fresh lemon juice, and lemon extract (if using) with a rubber spatula until just combined.
  3. Add the fresh blueberries and mini marshmallows to the bowl. Continue to fold the mixture together until blueberries and marshmallows are evenly coated.
  4. Cover the bowl with plastic wrap and place it in the refrigerator to chill for 30 minutes to 1 hour, allowing flavors to meld and the dessert to set.
  5. Just before serving, garnish with sliced almonds and fresh lemon zest, if desired, for added crunch and aroma.
  6. Serve chilled and enjoy!
