Unforgettable REESE Cheesecake: A Peanut Butter Chocolate Dream

There are some culinary moments that simply stick with you. For me, one recent memory involves a rushed grocery trip and a momentary lapse in judgment: I forgot to pick up a jar of REESE Peanut Butter Chocolate Spread. The look my daughter, Bridget, gave me when I offered an alternative for her beloved English muffin breakfast was priceless – a mix of disbelief and slight indignation, as if to say, “Mom, how could you possibly forget the REESE Spread?” It was a clear reminder of just how much this versatile, creamy spread is adored in our home. From quick, indulgent spoonfuls enjoyed mid-afternoon to a foundational ingredient in decadent desserts, REESE Spread has a special place in our family’s hearts and on our pantry shelves. Rest assured, I made a point to stock up generously on my very next shopping excursion!

Presenting the Ultimate REESE Cheesecake Recipe

Today, I am absolutely delighted to share the very first recipe from this exciting series, and trust me, it’s one for the history books: an extraordinary REESE Cheesecake. This isn’t just any cheesecake; it’s a symphony of flavors and textures, a true masterpiece that combines the best of rich chocolate with the iconic taste of REESE peanut butter. Prepare to be amazed, because this REESE Cheesecake is truly out of this world! It promises to be a showstopper at any gathering, a comforting treat for a quiet evening, or simply a magnificent dessert to indulge your deepest cravings. Its decadent layers and unmistakable flavor profile are designed to impress even the most discerning dessert connoisseur.

Crafting the Perfect Foundation: The Chocolate Cookie Crust

Every exceptional cheesecake begins with a solid foundation, and ours is no exception. This REESE Cheesecake features a delectable chocolate cookie crumb crust, baked to perfection in a 9-inch springform pan. Springform pans are truly a baker’s best friend when it comes to cheesecakes. Their ingenious design, with detachable sides, makes removing the delicate cheesecake from the pan incredibly easy, ensuring a flawless presentation every time. No more struggling with inverted plates or risking damage to your beautifully crafted dessert! To prepare this irresistible base, simply combine finely crushed chocolate cookies with rich, melted unsalted butter. The butter acts as a binder, holding the crumbs together beautifully. Press the mixture firmly and evenly into the bottom of the pan – a flat-bottomed glass or the back of a spoon works wonders for this. A quick bake in the oven sets the crust, transforming it into a stable, slightly crisp, and profoundly flavorful base that perfectly complements the creamy filling to come. For an even richer flavor, consider using dark chocolate sandwich cookies for your crumbs, adding an extra layer of complexity and depth to this already amazing dessert. This ensures every bite, from the first to the last, is a harmonious blend of textures and tastes.

The Star of the Show: Indulgent REESE Cheesecake Filling

The cheesecake filling itself is undoubtedly the highlight of this recipe, and it’s my absolute favorite part to both make and taste. What makes this filling so special is the generous inclusion of REESE Peanut Butter Chocolate Spread, which infuses every bite with that iconic, crave-worthy combination of chocolate and peanut butter flavor. Beyond the star ingredient, the filling is crafted from a harmonious blend of key dairy components: rich table cream (or heavy cream for a thicker consistency), softened full-fat cream cheese for that classic tang and body, and luscious sour cream, which adds moisture and a subtle tartness that beautifully balances the sweetness. Fragrant vanilla extract enhances the overall flavor profile, granulated sugar provides just the right level of sweetness, and a tiny pinch of salt elevates all the other ingredients. The combination yields a cheesecake that is remarkably creamy and smooth, yet delightfully lighter than a traditional New York-style cheesecake, which can often be very dense. It has an ethereal quality that allows it to practically melt in your mouth, leaving behind a lingering taste of pure dessert heaven. The careful balance of these ingredients ensures a luxurious texture without being overly heavy, making each slice a truly exquisite experience. This filling is a testament to the fact that simplicity, when combined with quality ingredients like REESE Spread, can create extraordinary results.

Baking to Perfection: Dry Heat Method & Concealing Imperfections

When it comes to baking cheesecakes, I often opt for the dry baking method over a water bath. While both methods yield delicious results, dry baking is considerably simpler, less fussy, and generally more approachable for home bakers. There’s no need to meticulously wrap your springform pan in several layers of heavy-duty foil or worry about water seeping into your crust, which can lead to a soggy base. Instead, you simply place the springform pan, nestled securely on a sturdy baking sheet, directly into your oven and let the dry heat work its magic. One common characteristic of cheesecakes baked with the dry method is the natural tendency for the top surface to develop a few cracks during the cooling process. However, for this particular REESE Cheesecake recipe, these minor imperfections are absolutely nothing to fret about! In fact, they become entirely irrelevant, as the entire top of the cheesecake will be generously blanketed with a lavish, glossy chocolate ganache. This luxurious topping not only adds another layer of incredible flavor, complementing the peanut butter chocolate filling beautifully, but also flawlessly hides any cracks or blemishes, ensuring your finished cheesecake looks as perfect and pristine as it tastes. This method allows you to focus on achieving that ideal creamy internal texture without obsessing over a flawless surface, making the entire baking process more enjoyable and less stressful. Plus, who can resist an extra layer of chocolate?

The Art of Patience: Cooling Your Cheesecake

If there’s one golden rule in cheesecake making that I cannot stress enough, it’s the paramount importance of proper and complete cooling. Rushing this crucial step is the most common mistake home bakers make, and it can significantly impact the texture, structural integrity, and overall enjoyment of your finished dessert. After the baking time is complete and your cheesecake emerges from the oven, resist the immediate urge to transfer it to the fridge. Instead, allow it to cool gradually on the counter at room temperature. This slow cooling process is vital as it helps to prevent rapid temperature changes that can shock the delicate custard, leading to further cracking on the surface and a less stable, often crumbly, texture. Only once it has reached ambient room temperature should you carefully move it to the refrigerator to finish chilling and setting. For optimal results and that perfectly firm yet creamy slice, I highly recommend allowing your REESE Cheesecake to chill for a minimum of 5 to 6 hours. Even better, if your schedule allows, letting it set overnight in the fridge yields the most superior results. I understand the temptation to sneak a quick slice – believe me, I’ve been there! – but the patience will be immensely rewarded. A fully set cheesecake will have a beautifully firm yet creamy texture, allowing for clean, elegant slices, and the flavors will have had ample time to meld and deepen, transforming a good cheesecake into an extraordinary one. Trust the process; your taste buds will thank you.

The Grand Finale: Luscious Chocolate Ganache & Toppings

Once your REESE Cheesecake has thoroughly cooled and set to perfection, it’s time for the crowning glory: a decadent chocolate ganache. This glossy, rich topping is surprisingly simple to prepare and adds an elegant finish, as well as an additional layer of intense chocolatey goodness, to our already magnificent cheesecake. Chocolate ganache typically involves just three key ingredients, making it accessible to even novice bakers: heavy cream, high-quality semi-sweet baking chocolate (chopped into small pieces for even melting), and a small touch of unsalted butter for that extra sheen and irresistible silkiness. You’ll gently heat the heavy cream in a saucepan until it’s steaming hot but not boiling. Remove it from the heat and immediately add your chopped chocolate and butter. Let the mixture sit undisturbed for a few minutes – typically 3 to 5 minutes – to allow the residual heat from the cream to melt the chocolate completely. After this resting period, gently stir the mixture from the center outwards until you achieve a perfectly smooth, velvety, and homogenous consistency. Once the ganache is smooth, allow it to cool for about 15 minutes – just enough for it to slightly thicken and become pourable, but not so thick that it becomes difficult to spread. Then, you can carefully pour it evenly over the top of your chilled cheesecake, using an offset spatula to spread it if necessary, ensuring a smooth, beautiful surface. The result is a stunning, mirror-like finish that promises indulgence and elevates the aesthetic appeal of your dessert. To elevate the experience even further, I absolutely love to garnish my REESE Cheesecake with a generous sprinkling of roughly chopped REESE Peanut Butter Cups. These iconic candies provide an extra burst of that beloved peanut butter and chocolate flavor, along with a delightful textural contrast and a playful visual element, making each slice an unforgettable treat that will leave everyone craving more.

Reese Cheesecake

Reese Cheesecake

A chocolate and peanut butter dream! This decadent cheesecake is sandwiched by chocolate crust and chocolate ganache with a peanut butter punch.

Created by: Stacie Vaughan

Servings: 8

Prep Time: 20 minutes

Cook Time: 1 hour 2 minutes

Total Time: 1 hour 22 minutes (plus chilling time)

Ingredients

Chocolate Cookie Crust

  • 1 ½ cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted

Reese Cheesecake Filling

  • 1 ½ cups table cream (heavy cream)
  • 1 ½ cups REESE spread
  • 1 cup sour cream
  • 2 packages (8oz/250g each) cream cheese, softened
  • ¾ cup sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • Pinch of salt

Chocolate Ganache

  • 1 cup heavy cream
  • 1 ½ cups semi-sweet baking chocolate, roughly chopped
  • 1 tbsp unsalted butter

Instructions

Chocolate Cookie Crust

  1. Preheat oven to 350°F (175°C). In a bowl, combine chocolate cookie crumbs and melted butter. Stir well until the crumbs are moistened.
  2. Press the mixture evenly and firmly into the bottom of a 9-inch springform pan.
  3. Bake for 12 minutes. Remove from oven and let cool completely on a wire rack while you prepare the filling.

Reese Cheesecake

  1. In a small saucepan over medium heat, gently heat the table cream until it just begins to simmer and steam. Do not let it boil vigorously. Remove from heat.
  2. Add the REESE spread to the warm cream. Let it sit undisturbed for 3 minutes to allow the spread to soften and melt from the heat of the cream.
  3. After 3 minutes, stir gently until the REESE spread is fully melted and the mixture is smooth and uniform.
  4. Whisk in the sour cream until well combined, then set this chocolate-peanut butter mixture aside to cool slightly to room temperature.
  5. In a large mixing bowl, using a hand mixer or stand mixer with a paddle attachment, beat the softened cream cheese on medium speed for about 1 ½ minutes until it is completely smooth and lump-free.
  6. Add the granulated sugar to the cream cheese and continue to beat for another minute on medium speed until well incorporated and creamy.
  7. Beat in the large eggs, one at a time, ensuring each egg is fully mixed into the batter before adding the next. This prevents overmixing.
  8. Stir in the pinch of salt and vanilla extract, beating for an additional 30 seconds on medium speed.
  9. Gently fold in the cooled chocolate-REESE mixture from step 7 until everything is smooth and well combined. Be careful not to overmix.
  10. Preheat the oven to 375°F (190°C). Place the springform pan with the cooled crust on a sturdy baking sheet.
  11. Pour the cheesecake mixture evenly into the prepared crust in the springform pan.
  12. Bake at 375°F (190°C) for 20 minutes. Then, reduce the oven temperature to 300°F (150°C) and continue to bake for another 30 minutes. The center of the cheesecake should still be slightly jiggly when gently shaken, indicating it is cooked but not overbaked.
  13. Remove the cheesecake from the oven. Immediately and carefully run a thin butter knife blade around the edge of the pan to loosen the sides. This crucial step helps prevent cracks as the cheesecake cools and contracts.
  14. Allow the cheesecake to cool completely at room temperature on a wire rack. Once it has reached room temperature, transfer it to the refrigerator to chill and set for a minimum of 5 to 6 hours, or ideally, overnight, for the best texture and stability.

Chocolate Ganache

  1. Once the cheesecake is fully chilled and set, prepare the chocolate ganache. Heat the heavy cream in a saucepan over medium heat until it begins to steam and small bubbles appear around the edges, but do not bring it to a rolling boil.
  2. Remove the saucepan from the heat and immediately add the roughly chopped semi-sweet baking chocolate and the unsalted butter. Gently shake the pan to ensure the chocolate is submerged in the warm cream. Do NOT stir initially.
  3. Let it sit undisturbed for 3 minutes. This allows the heat from the cream to melt the chocolate thoroughly.
  4. After 3 minutes, gently stir the mixture with a whisk or spatula until the chocolate and butter are fully melted and the ganache is perfectly smooth, glossy, and emulsified.
  5. Allow the ganache to cool for about 15 minutes at room temperature. This will allow it to thicken slightly to an ideal pouring consistency.
  6. Carefully pour the cooled ganache evenly over the top of the chilled cheesecake, spreading it gently with an offset spatula if needed to cover the entire surface.
  7. Optionally, garnish with a generous sprinkling of chopped REESE Peanut Butter Cups for an extra peanut butter chocolate punch and delightful texture. Serve chilled and enjoy!

Notes

It is critically important to let the cheesecake cool completely, especially in the refrigerator, to ensure it sets properly. Rushing the cooling process will result in a cheesecake that falls apart when cut, or has an inferior texture. The longer it chills, the better its texture, stability, and overall flavor will be. Plan ahead to allow ample cooling time.
