  • 2 cups cooked white rice (medium-grain or basmati recommended)
  • 1 cup crushed pineapple, thoroughly drained
  • 10 marshmallows, chopped (or an equivalent amount of mini marshmallows)
  • 1 cup heavy whipping cream, stiffly whipped
  • Maraschino cherries, for garnish
  • Cinnamon, for garnish

Instructions

  1. In a mixing bowl, combine the warm cooked rice with the chopped marshmallows. Stir until the marshmallows have completely melted and are well integrated into the rice, forming a sweet base.
  2. Add the thoroughly drained crushed pineapple to the rice mixture and stir until evenly combined, infusing it with tropical flavor.
  3. Gently fold in the stiffly whipped heavy cream. Mix carefully with a spatula to maintain the cream’s airy volume, ensuring it is just combined into the pudding mixture.
