- 1 lb extra lean ground chicken
- 2 tsp extra virgin olive oil

- 1 can (14oz/398ml) beans in tomato sauce, undrained
- 1 cup salsa
- 1 can (5.5oz/156ml) tomato paste
- 3 medium potatoes, skin on and sliced
- 2 cups shredded mozzarella cheese
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground chicken and break it up with a spoon until crumbly and browned.
- Stir in onion powder, garlic powder, cumin, oregano, and chili powder. Sauté for 5 minutes, stirring often, until chicken is fully cooked and spices are fragrant.
- Add the can of beans (undrained), salsa, and tomato paste. Mix everything well, cover the pot, and bring to a boil. Reduce heat to low and simmer for 10 minutes.
- Spray the inside of a 6-quart slow cooker with nonstick cooking spray.
- Spread half of the chili mixture evenly over the bottom of the slow cooker.
