- 1 tbsp extra virgin olive oil
- 4 boneless skinless chicken breasts, chopped into bite-sized pieces
- 2 yellow onions, finely chopped
- 4 cloves garlic, minced
- 1 jar Patak’s Butter Chicken Cooking Sauce (400ml jar)
- 1 can diced tomatoes (28oz can, undrained for maximum flavor)
- 4 cups chicken broth
- 2 ½ cups rotini pasta, uncooked (or any other type of curly pasta like campanelle or cavatappi)
- 2 tbsp fresh basil, roughly chopped, for aromatic freshness
- 1 cup ricotta cheese, for creamy swirls
- 1 cup mozzarella cheese, shredded, for topping
- 4 green onions, chopped, for garnish
- Salt and pepper to taste
Instructions
- Heat the extra virgin olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the chopped chicken breasts and cook for 4 to 5 minutes, or until lightly browned.
- Stir in the chopped yellow onions and continue to cook for another 3 to 4 minutes, until they soften and become translucent.
- Add the minced garlic and the entire jar of Patak’s Butter Chicken Cooking Sauce. Stir well to combine all ingredients, allowing the flavors to meld, and cook for an additional 4 to 5 minutes.
- Pour in the undrained diced tomatoes and chicken broth. Bring the mixture to a rolling boil, then reduce the heat to minimum, cover the pot, and let it simmer gently for 30 minutes to allow the flavors to deepen.
- Increase the heat to medium-high and add the uncooked rotini pasta to the simmering soup. Cook for approximately 10 to 12 minutes, stirring occasionally, or until the pasta reaches your desired tenderness.
