This recipe transforms simple pantry staples into an amazing homemade dessert that’s quick to whip together and utterly unforgettable, promising a taste of sunshine in every bite.

These Pineapple Oatmeal Scotchies are genuinely a perfect cookie for any time of year! As an ardent fan of both butterscotch and classic oatmeal cookies, creating this recipe was an absolute must for my blog. The result is a cookie that boasts an incredible texture – moist, tender, and beautifully chewy – and it’s surprisingly simple to prepare, making it accessible for bakers of all skill levels. Whether it’s a sunny summer day or a cozy winter evening, these cookies bring a delightful warmth and a hint of tropical escapism to your kitchen.
Initially, I approached the combination of pineapple and butterscotch with a bit of trepidation, wondering if the bright acidity of the pineapple might overshadow the distinct sweetness of the butterscotch. To my immense delight, it did not! Instead, the crushed pineapple introduces a subtle, refreshing sweetness and a lovely moistness that perfectly complements the robust butterscotch flavor. With each bite, your palate will first be greeted by the comforting, buttery notes of the butterscotch, followed by the wholesome nuttiness of the oats, and a delicate whisper of cinnamon, all beautifully harmonized by the tropical sweetness of the pineapple. It’s a symphony of flavors that keeps you coming back for more.

Ingredients for Your Tropical Scotchies
Crafting these delectable Pineapple Oatmeal Scotchies requires a straightforward list of ingredients, most of which are pantry staples. The magic truly happens when these simple components come together to create such a complex and satisfying flavor.
- Crushed Pineapple: The star tropical ingredient. Ensure it’s well-drained to prevent your cookies from becoming too wet or spreading excessively. It adds moisture and that signature sweet-tart flavor.
- Unsalted Butter: Softened butter is crucial for a smooth dough and contributes to the rich, tender texture of the cookies.
- Brown Sugar: Packed brown sugar provides deep, molasses-like sweetness and helps keep the cookies incredibly moist and chewy.
- Large Egg: Acts as a binder, adding structure and richness to the cookie dough.
- Old-Fashioned Rolled Oats: The foundation of any good oatmeal cookie, providing that characteristic hearty texture and a subtle nutty flavor. Avoid instant oats, as they can result in a different texture.
- All-Purpose Flour: The primary dry ingredient that gives the cookies their structure.
- Baking Powder: A leavening agent that helps the cookies rise slightly and achieve a soft, airy interior.
- Cinnamon: A warm spice that beautifully complements both the butterscotch and the oats, adding depth to the flavor profile.
- Salt: Essential for balancing the sweetness and enhancing all the other flavors in the cookie.
- Butterscotch Chips: The defining ingredient of any “Scotchie,” these chips melt into pockets of caramel-like sweetness, creating an irresistible treat.

Essential Baking Equipment for Your Pineapple Oatmeal Scotchies
Having the right tools can make all the difference in your baking experience, turning the process from a chore into a joy. While these Pineapple Oatmeal Scotchies are relatively simple to make, a few key pieces of equipment will ensure perfect results every time. Please note that this post contains affiliate links, meaning I may earn a small commission if you make a purchase through these links, at no extra cost to you. These are the items I personally recommend for their quality and utility:
- Baking Sheets: High-quality nonstick baking sheets are truly indispensable for any baker. They ensure even cooking and prevent your precious cookies from sticking, making cleanup a breeze. Investing in a set with an array of sizes will equip you for everything from sheet pan dinners to perfectly baked cookies and roasted vegetables.
- Mixing Bowls: I have a strong preference for glass mixing bowls. Not only are they durable and easy to clean, but their transparency allows you to keep an eye on your ingredients as they combine, which is especially fun for kids who love to watch the magic happen! A good set of various sizes is perfect for separating wet and dry ingredients.
- Stand Mixer: While you don’t need to be a professional pastry chef to appreciate a stand mixer, it undeniably makes baking tasks effortless. This powerful machine excels at creaming butter and sugar, mixing doughs, and can even handle other versatile kitchen tasks like kneading bread or rolling pasta. Its efficiency saves time and arm strength, ensuring consistently light and fluffy results for your cookie dough. If you don’t have a stand mixer, a good quality hand mixer will also do the trick beautifully.
- Parchment Paper or Silicone Baking Mats: For non-stick baking and easy cleanup, always line your baking sheets. Parchment paper is excellent for single use, while silicone mats are a reusable, eco-friendly option.
- Wire Cooling Rack: Essential for cooling cookies evenly and preventing them from becoming soggy on the bottom. Air circulation is key to maintaining crisp edges and chewy centers.

How to Make Pineapple Oatmeal Scotchies: A Step-by-Step Guide
Creating these delightful Pineapple Oatmeal Scotchies is a straightforward and rewarding process. Follow these simple steps for perfectly baked, chewy, and flavorful cookies every time:
- Prepare Your Oven and Baking Sheets: Begin by preheating your oven to 375ºF (190ºC). While the oven heats, prepare your baking sheets. You can either lightly coat them with cooking spray or, for easier cleanup and consistent results, line them with parchment paper or silicone baking mats.
- Cream Butter and Sugar: In a large mixing bowl, combine the softened unsalted butter and packed brown sugar. Using an electric mixer (a stand mixer or hand mixer works perfectly), beat these ingredients on low speed until the mixture becomes light, fluffy, and well combined. This process incorporates air, contributing to the cookies’ tender texture. Next, add the large egg and continue to beat on low speed until it is fully incorporated into the mixture, ensuring no streaks of egg remain.
- Combine Dry Ingredients and Fold in Mix-ins: In a separate large bowl, whisk together the old-fashioned oats, all-purpose flour, baking powder, cinnamon, and salt. This ensures that the leavening and spices are evenly distributed throughout the dough. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tough cookies. Finally, gently fold in the well-drained crushed pineapple and butterscotch chips. Folding helps to distribute these additions without crushing the pineapple too much or overworking the dough.
- Portion and Shape the Cookies: Using a cookie scoop or two tablespoons, drop approximately two tablespoons of cookie dough onto the prepared baking sheets. Leave at least 2 inches (5 cm) of space between each cookie to allow for proper spreading during baking. Gently flatten each cookie slightly with the back of a spoon. This helps them bake more evenly and achieve that perfect chewy texture.
- Bake to Golden Perfection: Place the baking sheets in your preheated oven and bake for 15 to 20 minutes. The exact baking time may vary depending on your oven, so keep an eye on them. The cookies are done when their edges are lightly browned and the centers are set but still look soft.
- Cool and Serve: Once baked, remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Cooling on a wire rack ensures air circulation, preventing the bottoms from becoming soggy. Serve warm or at room temperature.
This recipe is quite generous, yielding approximately 2 dozen jumbo cookies or a satisfying 3 dozen regular-sized oatmeal scotchies. This makes it an ideal choice for bake sales, sharing with a crowd, or as thoughtful homemade holiday gifts! Should you need a smaller batch, the recipe can easily be halved.
What Exactly is a Scotchie?
If the term “Scotchie” leaves you a bit puzzled, rest assured, you’re not alone! I’ve introduced these cookies to friends who’ve given me quite the bewildered look. Simply put, a Scotchie is a delicious cookie that prominently features two cornerstone ingredients: wholesome oatmeal and delightful butterscotch chips. This combination creates a uniquely comforting and rich flavor profile that is, if I do say so myself, an absolute winning combination!
Beyond these two essential elements, the beauty of a Scotchie lies in its versatility. You can add any mix-ins your heart desires to complement the base flavors. And for those who might not be keen on the tropical twist of pineapple, feel free to omit it entirely and bake a traditional batch of classic Oatmeal Scotchies – they’re equally delicious and comforting!
How to Store Your Pineapple Oatmeal Scotchies for Lasting Freshness
Cookies are among my favorite treats to bake, not just for their deliciousness, but also because, when stored correctly, they maintain their delightful freshness for a surprisingly long time!
Countertop Storage: For immediate enjoyment, freshly baked oatmeal cookies can typically last up to two weeks when stored in an airtight container at room temperature on your countertop. While they might lose a bit of their initial softness after the first week, a quick few seconds in the microwave can gently warm and restore their tender, chewy texture, making them feel freshly baked again.
Freezing for Extended Freshness: If you’re looking to extend the life of your Pineapple Oatmeal Scotchies even further, the freezer is your best friend! These cookies freeze exceptionally well and can remain delicious for up to two months. To thaw, simply remove them from the freezer and let them sit at room temperature for a few hours. They’ll be ready to enjoy as if they were just baked. This makes them perfect for meal prepping desserts or having a convenient treat on hand whenever a craving strikes.
Freezing Cookie Dough: For ultimate convenience, you can also freeze the raw cookie dough. Form the dough into balls, place them on a parchment-lined baking sheet, and freeze until solid. Once firm, transfer the frozen dough balls to an airtight freezer bag. When ready to bake, simply place the frozen dough balls on a baking sheet and bake as directed, adding a few extra minutes to the baking time as needed. This allows you to have warm, freshly baked cookies whenever you desire, without the full preparation effort.
Variations and Customizations for Your Oatmeal Scotchies
While the Pineapple Oatmeal Scotchies recipe is fantastic as is, don’t hesitate to get creative and personalize your cookies! Here are a few ideas to inspire you:
- Nutty Addition: For an extra layer of crunch and flavor, consider adding ½ cup of chopped pecans or walnuts to the dough. They pair wonderfully with both oats and butterscotch.
- Spice It Up: If you love warm spices, a pinch of nutmeg or allspice could be a delightful addition alongside the cinnamon.
- Chocolate Lover’s Twist: For those who can’t resist chocolate, a blend of butterscotch and white chocolate chips or even milk chocolate chips would be a decadent variation.
- Dried Fruit Fun: While fresh pineapple adds moisture, consider adding some dried cranberries or shredded coconut for a different texture and flavor profile, especially if you’re looking to reduce moisture content.
- Gluten-Free Option: To make these cookies gluten-free, substitute the all-purpose flour with a 1:1 gluten-free baking flour blend that contains xanthan gum, and ensure your oats are certified gluten-free.
