Ingredients

  • 4 boneless skinless chicken breasts cooked, cut into cubes
  • 1 can pineapple chunks, drained with juice reserved 14oz can
  • 1 cup red grapes
  • 1 cup green grapes
  • 1 cup celery chopped
  • ⅔ cup dry salted peanuts coarsely chopped
  • ¼ tsp dried tarragon
  • 1 cup mayonnaise
  • 2 tbsp lemon juice
  • 2 tbsp juice reserved from can of pineapple chunks
  • 1 tbsp parsley chopped, for garnish, optional
